I’m thinking of installing a peninsula 1200mm wide that will incorporate a gas hob and electric built in oven:

What happens with gas plumbing and the electrics considering that there’s no wall to attach and gas pipes or cable? The floor is concrete, so would the gas pipe just be imbedded into the concrete, similarly with the electrics?

Mat,
This is achievable by using appropriate protective measures and laying beneath the flooring but this work has to be carried out by competent and approved tradesmen qualified to undertake both gas and electrical work on authority of the regulatory bodies.
To locate a suitable installer in your area you can search on the Corgi-Gas website and for an electrician search on the NICEIC website.
