Hi, do you run laminate upstand behind a gas hob, or do you stop, and leave a gap?

Hob is 60cm wide, and I want a splashback in stainless st or glass 60cm to sit behind hob. Would you run upstand all the way along and then fit splashback on top of the upstand or would you fit splashback first, and then run the upstand up to the splashback?

Hard to explain these things in words sometimes!

Any material fitted behind a hob should be non-combustible so this rules out laminate.
You can fit a stainless steel splashback and butt the laminate up to it each side.

So in images I’ve seen where it goes behind the hob, I’m guessing this is granite or similar then? I will leave a 60cm gap behind the hob, and put the SS splashback in, down to the worktop. Thanks
